Immunity, from the Latin word immunitas, is a mechanism whose main role is to maintain the balance of the body. The immune system protects us against various external contaminants (viruses, bacteria, fungi, parasites...) and negative internal influences (tumours or dead cells).

 

 

 

Immunity can be divided into:

 

  • non-specific (natural, innate), characterised by a rapid but always identical response to pathogens,

  • specific (acquired), which is based on the body's specific response to pathogens, i.e. the cells of specific immunity are able to recognise, react to and remember a particular substance (antigen).

 

 

 

An important part of the immune system is the lymphatic system, the active part of which is the lymph, the fluid produced between cells. Lymph nodes produce lymphocytes - immune cells that protect us from foreign micro-organisms. The lymphatic system also includes organs such as the thymus and spleen, as well as bone marrow and lymphatic tissues such as the tonsils or lymphatic tissues concentrated along the digestive tract.

 

 

 

The body's immune system recognises the harmful from the harmless and thus protects the body from both internal and external unwanted micro-organisms - be they viruses, bacteria or the body's own mutated cells. At the same time, it is able to "remember" situations it has already experienced and act on that experience.

These changes are the following:

 

  • - excessive use of chemicals in agriculture, industry and the home, which is becoming increasingly sterile.

  • - additives in food (stabilisers, colours, flavours, aromas, flavourings... the so-called 'E's - although not all of them are harmful)

  • - unhealthy livestock farming in cramped conditions, with excessive use of antibiotics, growth hormones etc., which in turn affect the quality of  the meat and are absorbed into the human body through the consumption of meat.

  • - excessive consumption of refined sugars containing harmful fructose, white flour products

  • - excessive use of antibiotics

  • - the exclusion of animal fats from the diet (e.g. yoghurts have been replaced by starch, which is just as high in calories but is a ballast and does not contain the fat-soluble substances the body needs; butter is replaced by various vegetable substitutes, using emulsifiers, colourings, stabilisers), which results in particular in a chronic deficiency of vitamin D in the diet (officially established doses of vitamin D3 are too low compared to the current diet). Fats should make up about 1/3 of the diet. Among vegetable fats, e.g. olive oil (high in antioxidants), among animal fats, e.g. butter - source of vitamins A, D, E, K...
